Born in Dublin, Chef Eric Matthews’ career has taken him far and wide. Eric has spent almost 20 years working in some of the best Michelin-starred restaurants in Ireland and the world including The Square in London, time spent at The Fat Duck in Bray on Thames and Guillaume at Bennelong in the Sydney Opera House. Eric’s homecoming culminated in his appointment as Head chef at the Michelin-starred Chapter One on Dublin’s Parnell Square. Eric led the kitchen to maintain its Michelin star for 5 consecutive years.
Director / Co-owner
Born in Chicago and raised in Dublin, Richie Barrett has 15 years experience in such notable restaurants as Etto, Uno Mas, BANG restaurant in Dublin and Supernormal eatery in Melbourne, Australia. Richie has always been passionate about traveling and experiencing other foods and cultures, developing his enthusiastic palette, appreciating food, wines and cocktails. Coming back to Dublin, Richie rejoined the BANG restaurant & bar team as Wine Buyer & Bar Manager, and is a 3-time recipient of the Wine Spectator Award of Excellence for BANG. He progressed to lead the team there as general manager.
General Manager
Born and raised in Monaghan, Shane Gormley moved to Dublin in 2010 and has been working in hospitality ever since. After opening 2020’s best Cafe in Monaghan, Eileen’s Tea Rooms, 15 years ago with his family, Shane has worked for numerous companies in Dublin. Being with the Port House group for years, and managing Bewleys Grafton Street for their 2017 relaunch. Joining BANG with Richie, they knew they had a good partnership. Shane’s passion for customer service comes second to his passion for music, keeping the atmosphere in Kicky’s just right. Keep ‘er country.
Head Chef
Born in Italy in a small town in the countryside in the middle of the Prosecco hills, Marco Moret has always been very curious and attentive to the products that the territory offers. He began working at the age of 16 in the kitchen of Franco De Bin (Michelin star chef).
In 2018 Marco moved to Milan and for three years learned from chefs Luca Pedata and the famous Carlo Cracco. For three years he devoted himself completely to refined but very traditional Italian cuisine. In 2021 he moved to Dublin where he joined the team at BANG restaurant and later Locks in Portobello.
Marco has known Eric for some time and in January joined the team as sous chef. Marcos natural affinity with Mediterranean produce and traditions have made him the perfect partner in the kitchen with Eric. In June 2024 Marco was promoted to Head Chef, responsible for managing and training the kitchen team and supporting Eric in the kitchen.
